500 gr. Of flour
170 gr. Brown sugar
200 gr. Of butter at room temperature
150 gr. of honey
1 egg
1 teaspoon baking powder
1 or 2 teaspoons of cinnamon (I’ll put 1)
1/4 teaspoon salt

ELABORATION to cook Cinnamon cookies

Sift together, flour, yeast and salt and reserve.
We begin by whipping the butter with the sugar until they are well integrated.
Lower the speed and add the egg, which previously we will have beaten a little and mix until it is well integrated into the mixture.
Add the honey and cinnamon now and beat for a few seconds.
We begin to add the flour to tablespoons, one every 5 seconds approximately, until finishing to throw it all.
Knead for 3 or 4 minutes until smooth and homogeneous.
Make a ball and cover with transparent film and put it in the refrigerator for 1 hour. We took it out of the fridge and divided it into three parts. With the help of a roller, we will stretch each of the three parts between two baking papers, so that the dough does not stick to the roller or the countertop. We will form three plates of 5 mm. Of thickness each one.
We put the plates in the fridge for two hours.
After two hours, we remove the plates from the refrigerator and with the help of a short pasta, we will shape our cookies. You can use the cutter you like and even use several different, as long as you take the precaution of baking together the same size cookies because if they will not do one before others.
Place the chopped cookies on the oven tray to be used, previously lined with baking paper or with a silicone mat.
Introduce the cookies in the refrigerator for 20 minutes so that they do not lose shape in the oven.
Preheat the oven to 170º C. and introduce the cookies for 12 or 15 minutes. You will notice that they are already when they begin to brown by the edges.
We will remove them and leave them on the same baking sheet for 5 minutes. At that moment and with the aid of a spatula we will place them on a grid until they are completely cooled.
